Job Description

Are you a highly skilled and passionate butcher looking for a leadership opportunity? We are on the lookout for a talented butcher to join our management team as one of the Head Butchers at Sinclair Meats Mackay, assisting with leading a team and ensuring quality at two locations within Mackay. Mackay is the gateway to the Whitsunday Islands and home to Australia’s longest stretch of subtropical rainforest and pristine beaches. 

Responsibilities: 

  • Assist the Store Managers with day-to-day operations (rotating between the two stores) 
  • Ensure the highest standards of meat preparation, trimming, cutting and packing for orders and display. 
  • Developing a dedicated team of skilled butchers and provide training as needed 
  • Maintain inventory, order supplies, and manage stock rotation 
  • Uphold hygiene and safety standards that align with Safefood 
  • Contribute to the development of new product offerings 
  • Adhering to National Employment standards and Company Employment Policies 
  • Work alongside the General Manager to fulfil daily operations to achieve company KPI’s 

 Qualifications: 

  • Applicant Must be an Australian Resident with Proven experience as a Head Butcher or similar role in Australia – including reputable references 
  • Relevant Qualifications in meat processing (Cert 3 Meat Processing) 
  • Strong leadership and team management skills 
  • Excellent knowledge of whole-carcass butchery and processing 
  • Knowledge of processing Smallgoods (Ham, Bacon, Kabana etc) 
  • Proficiency with knife handling and ability to teach others 
  • Understanding of industry regulations and hygiene standards and daily Safefood reporting 
  • Ability to thrive in an autonomous role and fast-paced environment 
  • Creativity in developing new products 
  • Manual Drivers Licence (MR, HR and Forklift will be beneficial)
